tastes delicious but the pudding never thickened as much as I would have liked, maybe I need to cut the liquid down or add more cauliflower. i know how to cook and was looking for a thicker pudding… maybe another egg yolk? Thank you!

Hi William,
The pudding will thicken up more as it cools, if you want a thicker warm pudding then try adding half the almond milk and see how that goes. You can always add it back in if your pudding gets too thick!

This is very delicious. In my opinion it tastes better warm. Completely hits the spot. Thank you for sharing this recipe. I’ll be making it again.

This sounds wonderful. Do you know if I can use frozen cauliflower rice?

Hi Christy,
I think it would work well, it might just need to cook a bit longer as frozen cauliflower can be a bit watery.
