Here’s How It’s Done

STEP 1. Cook up your chicken (pan fry or boil, your choice) (or use rotisserie chicken!)

I use the pie crust you will find in the refrigerated section of your grocery store – easy to use – and taste great!

STEP 3. Put the top crust on the pie, cut slits and bake!

Put it all in the bottom pie shell and cover it with the top pie shell, don’t forget the vents

STEP 4. DIG IN!

How Do I Thicken My Chicken Pie Filling?

This pie thickens its own filling while baking. That is what the two Tbs of flour are for. That said, you will notice that it is still a little runny if you cut it right away after baking. It’s best to let it cool completely to allow the inside of the pie to congeal.

Can You Cook Chicken Pie From Frozen?

You sure can! Set the oven on 325 and bake for about an hour to an hour and 20 minutes. If it appears that the crust is becoming too dark, cover with aluminum foil.

How Do You Seal a Pie Crust?

Go around the pie and pinch the two crusts together with your finger tips. You’ll want to be sure to cut vent holes in the upper crust so that the steam can escape while cooking.

How Do You Vent a Pie?

Once the upper crust is on the pie, use a table knife or a sharp kitchen knife and cut some slits in the pie at evenly spaced places around the pie to allow the steam to escape from the pie.

What Happens If You Don’t Vent a Pie?

If you don’t vent a pie the upper crust will separate quite a bit from the filling usually. Sometimes, the inside will leak out through the edges and then it will drip into your oven making a mess! ewwwww.

Should I Egg Wash My Pie?

This is entirely up to you, but it does make for a nice browned top crust that is very appealing. You’ll be proud of how it looks with an egg wash! Alternatively, you can paint the top crust with heavy cream!

Should I Boil or Fry The Chicken For This Pie?

You can do either one, but you’ll want to make sure that the chicken is very tender and easy to pull apart. Either way, you don’t want to overcook the chicken.

Can I Freeze Chicken Pie?

Yes, you sure can! Simply allow the pie to cool all the way, wrap it well in a freezer safe package and freeze for up to 3 months! Do just like you would a chicken pot pie recipe.

How Long Is Chicken Pie Good For?

This chicken pie will last 5 days if kept in the refrigerator. Do Not allow it to sit out for more than 2 hours.

The best thing to serve with chicken pie is something simple!

TIPS AND TRICKS FOR Easy Chicken Pie

  • This is a terrific dish to take for office parties and holiday gatherings! It fits easily inside a gallon zip lock bag if made in an aluminum foil pan.
  • If you are going to make this as a “take it and toss it” dish – which I recommend for hostess or office party situations – then use the “deep dish aluminum pie pan” -it does give you a little wiggle room.
  • I recommend tossing any leftovers before leaving the office party – because, I mean, honestly – don’t carry home a dirty disposable pie dish that everyone has had their hands on during cold and flu season. The nurse in me just can’t allow you to do that.
  • Make sure to include reheating instructions for your hostess if you are leaving this with her as a hostess gift. “Allow to thaw and then reheat at 350 for 30-45 minutes until heated through – cover with aluminum foil if the crust appears to be browning too quickly”.
  • This pie could just as easily be a Turkey Pie if that is what you have left over after Thanksgiving – just saying..
  • I like to make several of these at once, keep them in the freezer and then, I am ready to go for either of the aforementioned situations OR on a night when I haven’t planned a single thing for supper. Easy Chicken Pie is terrific with a salad or some roasted veggies

The Chicken

  • If you are using a rotisserie chicken as your cooked chicken, then just use boxed chicken broth and stir in flour.
  • Most people enjoy chicken breast for this recipe, but I personally recommend thighs.
  • No need to use melted butter in the recipe, this melts all by itself.

Ingredients

  • 2 lbs chicken breast - cooked and cut into bite sized pieces or shredded
  • 2 refrigerated pie crust
  • 2 tbs flour
  • 1/3 cup chicken stock
  • 1/3 cup whole milk
  • Salt and pepper to taste
  • 2 tbs butter
  • 1 beaten egg

Instructions

  • Preheat the oven to 450. Press the pie crust into the bottom of a deep pie plate. Pinch along the edges. Scatter the shredded chicken into the pie crust. Whisk together the flour, stock and milk and then pour over the chicken. Salt and pepper the chicken according to taste. Cut the butter into small pea size pieces and place around the dish.

  • Unroll the second pie crust onto the top of the pie. Pinch the edges together to form a seal. Paint the top of the pastry crust with the beaten egg.

  • Bake at 450 x 20 minutes and then 375 for an hour. Allow to rest for 10 minutes before serving so that the juices will congeal.

Notes

  • Use the type of chicken that you prefer (white or dark meat) for this recipe, but most people seem to prefer the white meat.
  • This recipe WILL be slightly watery in the crust, that is to be expected.
  • If you allow the pie to sit in the fridge overnight, it does seem to taste better, but will become more soggy on the bottom crust.
