Hi guys! Just wanted to share with you this quick, easy and DELICIOUS breakfast recipe, for my Fried Apple and Almond Butter Toast. The recipe is autumn inspired, and makes for a quick and tasty meal at breakfast or snack-time.

To make the recipe I’ve simply fried some chopped apple in coconut oil, sprinkled with a bit of cinnamon and cardamom. The apples warm and soften into a desserty treat, and the spices bring beautiful fall flavours to the fruit.

I love frying chopped apples like this when I’ve gone a tad overboard and bought too many apples. Apples are so abundant at the market at the moment, and so it’s proving to be a real problem for me. There is tons of fresh, seasonal apples of all different varieties. And I just can’t help buying 1/2 a kilo of each! Biting into a fresh, crisp and cold apple is one of my favourite parts of the fall season. But often my eyes are bigger than my stomach and I buy way more than I can chew. After a few days they start to lose their shine and go a little soft. Although there is nothing better than a crisp seasonal apple, there is nothing worse than a mushy old one.

This recipe was made to mitigate the slightly bad habit of overbuying seasonal apples. It’s the perfect way to use up those old looking apples, or even the one’s that perhaps don’t taste as sweet or crisp as you’d hoped for. Frying the apples makes them deliberately soft and brings out their natural sweet flavours, so it becomes more a dessert. They’re also easier to digest when cooked.

For a quick sweet treat, I like to lather the fried apples on top of whole wheat toast, spread with a thick layer of almond butter, and then drizzled with maple syrup. The combination is bliss.Fried Apple and Almond Butter Toast Recipe | Two Spoons (3)

The apples make a healthier toast topping alternative to store bought jams. Lots of sugars and preservatives can be found in store bought jams. This recipe doesn’t use much sugar at all. Instead it makes the most of the natural sugars that are released when the apples are cooked. Adding just a little maple syrup to drizzle.

If toast isn’t your fancy these fried bananas would also be delicious on top of yogurt, with some granola, or topped on porridge (stay tuned for that recipe). And, you can also use those your old apples to make dessert recipes like my apple crumble bars, or my classic apple crumble recipe. They too celebrate the same idea: finding a delicious way to use up tired-looking apples. But this Fried Apple and Almond Butter Toast recipe is a great when you’ve got little time on your hands, and still want a little something sweet and decadent.

An easy and simple fall-inspired toast. Made by frying apples in coconut oil. Topped onto toast with almond butter and drizzled with maple syrup. Perfect for breakfast or snack time.

Serves 1 person

Ingredients

  • 1 apple (I used fiji)
  • 1 tsp coconut oil
  • 1/4 tsp cinnamon
  • 1/8 tsp cardamom
  • 2 slices whole-wheat bread
  • 2 tbsp almond butter
  • 2 tsp maple syrup to drizzle

Instructions

  • Begin by cutting apple into bite sized cubes. Add to a frying pan with 1 tsp coconut oil and bring to medium-high heat. Sprinkle with cinnamon and cardamom and cook apples, stirring often until warmed and softened, approx. 5-10 minutes.

  • Toast two slices whole wheat bread and lather with almond butter. Top toast with fried apple and drizzle with maple syrup.

    2. This was so good!! I tried to rate it but it wouldn’t allow me to for some reason. Only difference I made was to put it on gluten free toast. Also made for one so I left out the butter and just used coconut oil Almond butter, cinnamon, and cardamon drizzled with maple syrup. Thank you for this delicious recipe treat!
