Coconut cookies
You will need:
- 3.5oz (100g) offlour
- 3.5oz (100g) ofsugar
- 7oz (200g) ofcoconut flakes
- 2eggs
- 1teaspoon ofbaking powder
Directions:
- Beat the eggs with sugar.
- Add coconut flakes, mix.
- Add flour and baking powder, mix again.
- Cool the dough for 30minutes.
- Wet hands and shape cookies.
- Bake at350F (180°C) for 15minutes.
Apple cookies
You will need:
- 4oz (120g) ofsugar
- 1/2 teaspoon ofvanilla extract
- 4eggs
- 7oz (200g) ofmargarine
- 17oz (500g) offlour
- 1teaspoon ofbaking powder
- 3apples
Directions:
- Mix eggs, sugar, and vanilla.
- Add softened margarine and mix again.
- Add flour and baking powder, and mix with aspoon.
- Peel apples and cut into small cubes, add tothe mix.
- Put the mixture onthe baking tray with baking parchmenton. Becareful not toput the cookies too close together. Bake at400F (200°С) for 10–15minutes.
Sesame cookies
You will need:
- 2.5oz (70g) offlour
- 2oz (60g) ofbutter
- 4oz (120g) ofsugar
- 1egg
- 1/2 teaspoons ofvanilla extract
- 1teaspoon offresh lemon juice
- 5.5oz (160g) ofsesame seeds
- 1/2 teaspoons ofbaking powder
- 1/2 teaspoons ofsalt
Directions:
- Mix together flour, baking powder and salt.
- Whisk softened butter with sugar. Add anegg, vanilla, and lemon juice tothe mixture. Whip for 20-30seconds.
- Atlow speed, add flour little bylittle tothe mixer
- Mix insesame seeds (make sure tolightly roast sesame seeds beforehand) with aspatula.
- Pre-heat the oven to350F (180°C). Put the mixture onthe baking tray with baking parchmenton. Put the cookie mixture about 3-4cm apart because the cookies will spread.
- Bake 8-15 minutes depending onthe size.
Chocolate cookies
You will need:
- 8.5oz (240g) ofbaking chocolate
- 4tablespoons ofbutter
- 2/3 cups offlour
- 1/2 teaspoons ofbaking powder
- 1/2 teaspoons ofsalt
- 2big eggs
- 3/4 cups ofsugar
- 1teaspoons ofvanilla sugar
- 150g chocolate broken upinpieces
Directions:
- Pre-heat the oven to350F (180°C).
- Lay out the baking tray with baking parchment.
- Chop the chocolate into small pieces.
- Whip sugar, eggs and vanilla sugar (for about 4minutes).
- Melt8.5oz (240g) ofchocolate with butter onabain-marie orinamicrowave.
- Add chocolate tothe mixture and slowly mix.
- Inaseparate bowl mix flour, baking powder and salt. Add ittothe mixture and mix.
- Add remaining chocolate tothe mixture and mix.
- Put the cookie mixture about 5-7cm apart.
- Bake for 12-15minutes.
Homemade oatmeal cookies
You will need:
- 3.5oz (100g) ofbutter
- 1cup ofsugar
- 2eggs
- 1cup ofoats
- 1cup offlour
- nuts, candied and dried fruits (optional)
Directions:
- Mix butter with sugar, put inabowl and mix with afork.
- Blend with amixer until the mixture iseven.
- Add eggs and mix.
- Add acup ofoats.
- Mix and add stuffing, i.e. nuts and fruits. You should add about 2cups ofstuffing.
- Mix and add flour.
- Make dough balls, dip inflour and shape into cookies.
- Put the mixture onthe baking tray with baking parchment and olive oilon.
- Bake at400F (200°С) for 15minutes.
Milk biscuits
You will need:
- 14oz (400g) offlour
- 7oz (200g) ofsugar
- 3.5oz (100g) ofbutter
- 1egg
- 3oz (80ml) ofmilk
- 1/2 teaspoons ofbaking powder
Directions:
- Mix softened butter with sugar.
- Add egg, milk and baking powder, mix
- Add flour and knead the dough.
- Roll out the dough into a7–10mm sheet.
- Use aspecial form for baking with wavy edges orjust aregular metal molds for tartlets tocut out the cookies.
- Put the mixture onthe baking tray with baking parchmenton. Pre-heat the oven to350F (180°C).
- Bake for 15minutes until the edges darken.
Banana cookies
You will need:
- 2big soft bananas
- 1cup ofoats
- nuts, raisins, chocolate, cinnamon
Directions:
- Mix bananas with oats.
- Add nuts, raisins, chocolate, cinnamon (ifdesired).
- Bake at350F (180°C) for 15minutes.
"Madeleine" cookies
You will need:
- 4oz (120g) offlour
- 2eggs
- 3oz (80g) ofsugar
- 3oz (90g) ofbutter
- 1tablespoon oflemon juice
Directions:
- Soften butter, add eggs and sugar.
- Whisk the mixture.
- Add flour and lemon juice. Thoroughly mix.
- Mold dough into "Madeleine" shaped forms for cookies ( orany other).
- Bake at350F (180°C) for 12-15minutes.
"Coffee grains" cookies
You will need:
- 4tablespoons ofmilk
- 5tablespoons ofinstant coffee
- 7oz (200g) ofbutter
- 8oz (200ml) ofcream (30%)
- 9oz (250g) ofsugar
- 3tablespoons ofcocoa
- 22oz (650g) offlour
Directions:
- Dissolve coffee inhot milk. Add butter, sugar, cream and cocoa. Whisk all together.
- Add flour and knead the dough.
- Make dough balls. Make them abit longer (they should look like coffee grains).
- Use atoothpick tocreate alengthwise cut (look atthe picture).
- Put cookies onatray. Heat the oven to350F (180°C). Bake cookies for 12-15minutes.
"Guests are here" cookies
You will need:
- 2egg yolks
- 1pack ofvanilla sugar
- 9oz (230) gofflour
- 3oz (80g) ofpowder sugar
- 4oz (120g) ofbutter
- 3/4 teaspoons oflemon zest
Directions:
- Pre-heat the oven to350F (180°C).
- Set the baking tray byputting baking parchment, olive oil, and flour onit.
- Sift flour and sugar into abowl.
- Add softened butter, egg yolks and lemon zest.
- Mix until even.
- Knead for 5-10 minutes until the dough becomes elastic.
- Shape dough into a"sausage" and cut into circles.
- Put dough onbaking tray and bake for 10minutes.
