Learn how to make cauliflower kofta curry, with step by step pictures. No onion no garlic recipe, still turns out delicious and rich. The koftas, just melts in your mouth. There is a cheesy twist in the middle too 😉

I adapted this recipe from a cookbook borrowed from library. The original recipe uses broccoli, since me and my hubby don't like broccoli, I prepared the same with cauliflower.

Liked this recipe when I tasted first time at Sangeeta’s house, though she had made with broccoli.

I asked her the recipe, but she was not able to give that time. Since she told me the recipe source, I just got the cookbook from Library.

Variations

These koftas are absolutely delicious and just melts in mouth. You can

  • Deep fry
  • Shallow fry in appe pan (paniyaram pan) or flatten it slightly and cook over pan.
  • Bake it - Just flatten like a cutlet, bake these for 20 to 25 minutes at 220 deg C in a preheated oven.

If you are looking for low fat version you can either shallow fry or bake and skip cheese stuffing.

You can try stuffing grated paneer or some mixed grated vegetables (carrot,cabbage and capsicum) too instead cheese for a different version.

Top tip

  • If your kofta breaks, that means it is less with binding agents. Here binding agents are potato and corn flour. So increase these factors.
  • Also make sure to cook cauliflower well to blend well in kofta dough.
  • Over cooking potatoes will retain water and make kofta break.
  • Add 2 fresh bread crumbs or bread crumbs in the kofta dough to troubleshoot the breaking koftas.
  • You can use store bought tomato puree as well. But careful while adding milk and cream. It may break easily. In that case I suggest to add something like a cashew paste while frying masala which will prevent the milk splitting.
  • Make sure to cook the masala paste well until shiny. Otherwise taste and looks will not be good.

Method

  1. Pressure cook the potatoes, peel the skin off and mash them well. Make sure there's no excess water.

2. Heat a pan with a teaspoon of oil and fry the grated cauliflower. Cook covered in low flame for 4-5 minutes.

3. Mix mashed potatoes,cooked cauliflower,corn flour,pepper,salt,garam masala powder and baking powder.

4. Make small balls,by keeping the cheese cubes inside as shown in the picture.

Shallow fry

1. I did these for my cauliflower kofta rice :

  • Add few drops of oil in paniyaram pan and cook koftas turning occasionally to cook evenly in all sides.
  • Do it in medium flame or low flame to ensure it is cooked inside.
  • Once golden in all sides, take out and set aside.

2. Or method 2: quickly you can deep fry in medium flame till golden brown and keep aside.

For gravy

  1. For gravy, heat a pan with oil and splutter the jeera,add the chopped ginger and ginger paste. Add the tomato puree.

2. Add garam masala,red chilli,coriander powders along with salt and fry well until all the water evaporates and oil oozes out.

3. Again, add little water to make it to a thick gravy and add the coriander leaves and simmer for another 4-5 minutes.

4. Add milk and cream little by little while you mix well,in low flame. Do not let the gravy boil in high flame at any point of time. Add the koftas lastly, switch off the stove.

Yummy cauliflower kofta curry is ready to enjoy with rotis or any pulavs. I didn't add cream, just added milk. It was really yummy, just melt in ur mouth!

My kid loved and enjoyed thoroughly. I am trying no onion no garlic recipe for the first time and totally satisfied with the taste!

Ingredients

For kofta

  • 1.5 cups Cauliflower grated
  • 3 Potatoes boiled & Mashed
  • 1.5 tablespoon Corn flour White, corn starch
  • ¼ teaspoon Garam masala
  • ¼ teaspoon Chat masala
  • ¼ teaspoon Pepper powder
  • 1 pinch Baking soda Optional
  • Salt ¾ tsp
  • Oil for deep frying
  • 1 Cheese stick Cut into 8, or use cheese cubes cut into half

Ingredients For Gravy

  • 1 cup Tomato puree
  • 1 tablespoon Oil or butter
  • 1 teaspoon Cumin seed
  • 2 teaspoon Ginger chopped
  • ½ teaspoon Garam masala Powder
  • ½ teaspoon Red chilli powder
  • 1.5 teaspoon Coriander powder
  • Salt
  • 4 tablespoon Coriander leaves chopped
  • 1 cup Milk
  • ¼ cup Cream cooking cream

Instructions

Prepare kofta

  • Wash and pressure cook the potatoes firstly by adding a cup of water and lots of salt in a small pressure cooker for 2-3 whistles in medium flame.

  • Once done, peel the skin off and mash them well. Make sure there's no excess water retained, otherwise kofta will dissolve in oil.

  • Heat a pan with a teaspoon of oil and fry the grated cauliflower. Cook covered in low flame for 4-5 minutes.

  • Mix mashed potatoes, cooked cauliflower, corn flour, pepper, salt, garam masala powder and baking soda.

  • Make small koftas, by keeping the cheese cubes inside as shown in the picture.

Shallow fry

Deep frying

  • Heat enough oil in a kadai. Deep fry in medium flame till golden brown and keep aside.

For gravy

  • For gravy, heat a pan with oil and splutter cumin seeds, add the chopped ginger. Add the tomato puree.

  • After that, add garam masala, red chilli powder, coriander powder along with salt and fry well until all the oil oozes out.

  • Again, add little water to make it to a thick gravy and add the coriander leaves. Simmer for another 4-5 minutes.

  • Add milk and cream little by little while you mix well, in low flame. Do not let the gravy boil in high flame at any point of time.

  • Add the koftas lastly, switch off the stove.

Notes

  • Potatoes should not be overcooked. Otherwise, the koftas turn too soft if the mashed potatoes retain water because of over cooking. It will dissolve in oil.
  • You can replace corn flour with 2 bread slices. Grind in a dry mixer to make it crumb and then add. You can add bread to thicken your kofta is too sticky and loose.

    Hi Uma,First of all,thanks for the wonderful words and the feedback 🙂
    For pureeing I just grind the tomato as such in mixer. You can use store bought too,it will give the gravy a deep red colour. I think you can get Amul Cheese sticks,here we get a local brand in Singapore.. Or you can use any cheese cubes as I did,just cut them to desired size.. 🙂

    Hi Raks,tried this recipe..gravy part came out well..but the balls was a flop to me..i used only potatoes since i didn't have brocoli n cauliflower...when i dropped the potato balls in the oil it was not holding intact(it was getting out of shape n melting)what must be the reason..

    i boiled the potatos n took all the water n mashed it..i don't know where it went wrong..need ur help.thanks...

    Hi Uma,for potato alone I think you need to add more of the binding agent,here I have used corn flour as binding agent,next time try adding two slices of bread slices when you are mashing(dont add water,just remove the brown crumbs and mash it well along with potato and corn flour)...Try this next time,sure it will come out nice...

    Potatoes and corn flour is must and they are must for binding the Koftas. If cauliflower is more than mentioned, then this might happen. Also if the cauliflower is grated very roughly it will also not hold shape. Grate it finely. Hope this helps

    There are few possible reasons for it
    1. Too much of oil.
    2. Add milk little by little thoroughly mixing while adding each time. If you add all together, milk will curdle.
    3. Flame should be kept on low or medium.
    4. If using fresh milk, use boiled milk, not raw.
